Snow Fungus Soup
  1. Soak snow fungus in warm water until they get soft. This usually takes up to one hour. But its bottom will remain firm even after being soaked, so trim this part out.
  2. Put the snow fungus, red dates, lotus seeds, goji berries and water in a large pot
  3. Bring to a boil and then lower the heat. Simmer with lid partially closed for 30 minutes. Note: the longer you cook, the more gelatinous the soup gets.
  4. Add brown or rock sugar to give a little bit of sweetness
  5. Serve with warm or chilled
