Tofu with Yellow Bean Sauce

Tofu with yellow bean sauce
Instructions
  1. Cut firm tofu into squares, 3cm x 3cm, and 1cm thick. soak in salt water for 10 minutes
  2. Beat egg and flour together
  3. Cut capsicums and carrot into strips
  4. Take tofu out of salt water, dip in dry flour, and then in egg mixture
  5. Fry tofu one piece at a time in not-too-hot oil until both sides are yellow, and then put aside
  6. Add ginger to oil used to fry tofu and fry until fragrant
  7. Add carrot strips and cook until crunchy, and then add capsicum strips
  8. Add salt, and white sugar to taste and stir fry
  9. Return tofu to pan, mix well, add yellow bean sauce, bring to boil and simmer for 6-8 minutes.
  10. Serve with rice
