Instructions
Preparation:
  1. Slice onion thinly.
  2. Finely chop spring onions.
  3. Finely shred ginger.
  4. Add 5g cooking wine; 5g ginger; 5g spring onions and a pinch of salt to prawns. Mix well.
  5. Mix 1tbs potato flour with egg white and add mixture to the prawns. Mix well.
  6. Combine other ingredients in a separate bowl and add 100ml water.
Cooking:
  1. Add 5 tsp vegetable oil to the wok and cook until warm;
  2. Pour prawn mixture in and stir briskly so they don’t stick together;
  3. When prawns have changed colour strain off the oil and put prawns on a plate;
  4. Add 1 tbs vegetable oil to the wok and heat. Add onions and cook until soft then return the prawns to wok.
  5. Stir the rest of the ingredients once more then pour them into the wok and stir until sauce starts to thicken.
  6. Turn the heat off.
  7. Serve with rice and enjoy your delicious meal.
